Pickled Beets

 

 

Boil and peel beets being careful not to peel to close. Leave a little stem

on them. If you cut them too close they will "bleed" into water and

you will lose the flavor.

 

Add:

2 cups vinegar

1 cup water

1 cup sugar

 

Heat mixture thoroughly and pour over packed beets.

Seal and store in a cool dry place.
