Pinto Bean Pie

 

Just another great use for one of our favorite staple foods, pinto's!

 

1 cup cooked pinto beans (may use 1 can Luck’s 16 ounce)

1 can coconut

1 cup chopped pecans

4 eggs

3 cups sugar

1 tablespoon vanilla

2 sticks butter

3 unbaked pie shells

Mash beans (use the juice), beat eggs.

Add all other ingredients, mix well.

Pour into 3 unbaked pie shells.

Bake at 45 minutes to 1 hour at 300 degrees.

May be wrapped after cooling to freeze.
