2 cups water-ground white meal (white corn meal now days will have to do)
1 teaspoon salt
boiling water
Milk
Mix cornmeal and salt and scald it with the boiling water.
Drain and add sufficient cold milk to form a smooth soft batter.
Drop from the tip of a spoon onto a hot greased skillet or griddle.
Brown on both sides. Serve with margarine or sweet butter.
The johnny cake can be enriched with the addition of melted butter and beaten eggs.
